A Quick And Easy Nordic Dinner

A new eating trend seems to be finding its way into the mainstream. The Nordic diet is quickly overtaking the Mediterranean diet and paleo diet. Of course being a Norwegian Minnesotan this is no surprise as I’ve benefited from delicious seasonal foods that are Nordic in nature.

In this spirit, dinner tonight was right in this corner with an easy to prep, make, and super yummy Nordic meal.

Here’s your grocery list:

  • Salmon
  • BeeTiger14+Tigerts
  • Baby Arugula
  • Crumbled Feta Cheese
  • Roasted Sunflower Seeds
  • Red Wine Vinaigrette

I started with a simple salmon fillet that I prepared and cooked in parchment. If you haven’t cooked fish in parchment before, you definitely need to try it. The fish always comes out perfect and the cleanup is a snap. If you haven’t cooked fish like this check out this how to video.

Since the salmon takes 20 minutes to bake in the parchment at 400 degrees F, I figured why not toss in some sliced beets to bake at the same time!

The beets are just cleaned and thinly sliced and tossed in olive oil and seasoned with salt and pepper to taste. I wrap the beets then in aluminium foil to seal up the beets and place both the wrapped beets and wrapped salmon on the same sheet pan for baking.

Finally for the greens, you just can’t have a well rounded Nordic meal without the greens! When the salmon and beets have been in the oven for 15 minutes toss together baby arugula, feta cheese, and sun flower seeds. Dress with a simple red wine vinaigrette.

Now carefully remove the salmon and beets from the oven and be extra careful when unwrapping the parchment and aluminium foil pouches. Steam will be hot and there is nothing worse than being burned by steam – trust me.

Plate everything up and enjoy this great Nordic dinner.
