Apple Crumble Molasses Cookies

So I may have gone a little overboard with this delectable creation, but it’s too good not to share. This recipe takes the best of two of my favorites: Molasses Cookies and Apple Crumble. I know, so crazy—but at the same time it’s just oh so good.

Ingredients

1/2 cup Dark Brown Sugar
1/2 cup Granulated Sugar
3/4 cup Shortening
1/4 cup Molasses
1 Extra Large Egg
2 1/2 tsp Crumble Spice Artisan Blend (or Cinnamon)
2 1/4 cup All-Purpose Flour
2 tsp Baking Soda
1/2 tsp Salt
1/2 cup Apple Jam

Crumble Topping:
1/4 cup Oats
1/4 cup Flour
1/4 cup Melted Butter
1/2 tsp Crumble Spice Artisan Blend (or Cinnamon)

Directions

Preheat oven to 375 degrees F.  In a mixer combine sugars, shortening, molasses, and eggs. Mix on medium-high for about 3-4 minutes.

In a separate bowl, sift together flour, baking soda, Crumble Spice Artisan Blend and salt.  Reduce the mixer to low speed and slowly incorporate the flour mixture until just combined.

Using a #40 scoop (about 3 tbsp), scoop out cookie mixture and place on parchment-lined baking sheet about 2 inches apart. Using a round tablespoon

create a well in each cookie and fill with 1 teaspoon of apple jam.

Mix the crumble topping ingredients together and sprinkle the crumble topping on each cookie.

Bake for 12-15 minutes. Remove from oven and allow to cool for 5 minutes before removing to a cooling rack.
