Feisty Taco Spaghetti Squash

Feisty Taco Spaghetti Squash

A mix of spaghetti squash, ground turkey, black beans, peppers, onions, cheese, lime juice, and spices.

We are now entering in to squash season and I want to share one of my all time favorite meals with you, this Feisty Taco Spaghetti Squash. It can be made all at once, or in stages. Prepared ahead of time or on the spot. You can broil half at a time and save the rest for later, or eat it all at once. At least one of my kiddos loves it. And most importantly it is super delicious!

Ingredients

1 Spaghetti squash
1 lb ground turkey (substitute ground beef or leave out meat for vegetarian option)
3-6 tbsp taco seasoning
1/2-3/4 cups water
1 tbsp coconut or olive oil
4 tbsp garlic, minced
1 can black beans
1/2 red pepper, diced
1/2 green pepper, diced
1/2 onion, diced
1 tbsp chili powder
1/2 tbsp cumin
1/2 tbsp oregano
1 tbsp lime juice
Salt to taste
Pepper to taste
2 cups or so shredded cheese of choice (I used a Mexican blend, cheddar and mozzarella)

Suggested add-ins 
1/4-1/2 cup fresb cilantro, chopped or 1 tbsp cilantro, dry
1 cup fresh or frozen corn

Directions

Preheat oven to 350 degrees fahrenheit. Cut spaghetti squash in half, scoop out the seeds, and place face up on baking sheet. Drizzle with coconut / olive oil, put about a tbsp of minced garlic in the hole, and sprinkle with salt and pepper. Let cool, then use fork to make spaghetti like strands.

Meanwhile, start fry pan over medium high heat with 1 tbsp coconut / olive oil. When hot add 2 tbsp minced garlic, onions, and peppers for about 2 minutes. Next add the black beans, lime juice, oregano, chili powder, cumin. Add cilantro and corn if using and a touch of salt and pepper. I like to then put the mixture in a 5 quart pot.

Then using same pan, or simultaneously with above, heat pan to medium high heat and coat lightly with coconut / olive oil. Add turkey, break up into small pieces, and cook till there is no pink. Drain grease and return to burner. Add taco seasoning and water. Mix well until the taco mix begins to thicken.

Stir cooked turkey into 5 quart pot along with the cooked spaghetti squash (can all also be broiled inside of squash skin as pictured). Sprinkle with cheese until covered. Set oven to broil. Put 5 quart pot on upper rack and broil 3-5 minutes, watch carefully as cheese will easily burn.

Served with extra cilantro and lime wedges. Enjoy!
