Gluten Free Chocolate Lava Cake

Almost every restaurant I go to these days has lava cake on the menu for desert. This always looks so tasty. So I decided to try making my own. As usual I am trying to be a Frugal Gluten Free Gourmet so the ingredients should be ones you already have on hand in your pantry. My sister and her fiance gave it two thumbs up! You can also use white baker’s chocolate if you prefer.

Ingredients:

4 oz. semi-sweet baking chocolate
1/2 cup (1 stick) butter
1 tbsp red wine
1 tsp vanilla
1 cup powder sugar
2 eggs
1 yolk
4 tbsp Instant Potato Flakes
2 tbsp Corn Starch
1/4 tsp Holiday Spice Artisan Blend

Directions:

Microwave chocolate and butter in a large microwave safe bowl on HIGH for 1 minute or until butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in wine, vanilla, and sugar until well blended. Stir in egg and yolk. Stir in potato flakes, corn starch, and spice. Pour batter into 4 (6oz)buttered custard cups or soufflé dishes. Place on baking sheet.

Bake in preheated 425 degree oven 13 to 15 minutes or until sides are firm but centers are soft. Let stand for 1 minute. Carefully loosen edges with knife. Invert onto serving plates. Sprinkle with powder sugar or drizzle with chocolate and serve immediately.
