Gluten Free Monster Bars

I love monster cookies so I have been toying with a recipe for a few years. I finally came up with one I love that uses no flour at all, just oatmeal! You can make these as cookies or bars. I tend to make bars as it is less time consuming and less work. Either way it is delicious!

Ingredients:

3 cups Oatmeal
1 cup Brown Sugar packed
1/2 cup Vegetable Oil
2 Egg Whites
1 cup Peanut Butter
1/4 tsp Salt
1/2 tsp Almond Extract
1/2 – 1 cup of each of the following:
Chocolate Chips
White Chocolate Chips
Butterscotch Chips
Dark Chocolate Candies
Dried Cranberries

Directions

Mix the oats, sugar, and oil. Beat the egg whites into a froth and add to the mixture. Stir in peanut butter, salt, and almond extract. Stir in the candies. Use the candies you enjoy and amount desired. I like the full 1 cup of each, but a friend of mine thinks that is too much and makes hers with 1/2 cup. They are your cookies, so make them how you want them! Spread into a 9×13 pan and bake for 25 minutes at 325 degrees. For cookies drop by the spoonful onto ungreased cookie sheets and bake for 15 minutes at 325 degrees.
