Grilled Lemon Herb Shrimp

This shrimp recipe has become a weekly staple in our house. I find it’s a great meal to throw together when I haven’t planned anything ahead of time as I can quickly defrost the shrimp and get the meal going. Our family usually saves money by buying the shrimp when it is on sale and stock piling it in the freezer.

Ingredients:

1 pound pre-cooked, frozen shrimp
Juice and zest of one lemon
3 tbsp extra-virgin olive oil
1 tbsp chopped fresh thyme
1 tbsp chopped fresh rosemary
2 tbsp minced garlic
Kosher salt and fresh ground pepper to taste

Directions:

Preheat grill to high. Defrost shrimp as directed on bag. In a bowl or resealable plastic bag mix together lemon zest and juice, olive oil, thyme, rosemary, garlic, salt, and pepper. Then add the shrimp to the bag and marinate in the refrigerator for 1/2 to 1 hour.

Remove shrimp from marinade and discard leftovers. Then put on grill for 2-3 minutes. Enjoy on a salad or couscous.
