Last night I was looking to make a quick and easy dinner and was on the verge of reaching for a frozen pizza. But then my healthy conscious kicked in and said “come on, you can whip together a tasty salmon dish in the amount of time it will take to bake a pizza.” Plus I just received a set of Artisan Blends in the mail and couldn’t wait to try one out in the kitchen. So I threw together this tasty dish. It only took about five minutes to prepare and we were eating it within 15 minutes of when I started.
Fish
2 Salmon fillets
1 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic
Pinch of sea salt
Pinch of black pepper
1/2 tsp dill
1/2 tsp parsley
Cucumber Sauce
1/2 cup plain Greek yogurt
Half a cucumber diced
1/2 tsp lemon juice
1 tsp Nordic Fields Artisan Blend
To prepare fish, mix all the ingredients listed under fish together and brush the mixture on to the fish.
Spray olive oil on a grill basket or fancy fish grilling kitchen item (for lack of a more technical term) and place the fish in/on there. Grill over medium hot heat until the fish flakes easily with a fork. Mine took about four minutes per side. A good guide to use is 4-6 minutes per 1/2 inch of thickness, and if more than an inch thick flip halfway through grilling.
For the sauce, mix all the ingredients together and put on the fish after it is grilled.
