Pecan Roasted Sweet Potatoes

It’s fall and the bounty of the harvest is coming in. I love sweet potatoes and this simple and so yummy prep will make your basic sweet potato dish sing with sweetness, nuttiness, and spice begging for seconds.

For this recipe I cube up the sweet potato into one inch pieces and toss in a ziplock bag with my other ingredients (dark brown sugar, roughly chopped pecans, my Crumble Spice blend, and some olive oil. Toss this into a baking dish and then cover with foil and bake in the oven for about an hour.

Ingredients:

4 Sweet Potatoes Peeled and Cubed
3 tbsp Olive Oil
1 tsp Crumble Spice Blend
1 cup Chopped Pecans
1/3 cup Dark Brown Sugar

Directions:

Preheat oven to 375 degrees F.

In a ziplock bag, toss together all ingredients and then place in a baking dish. Bake at 375 for approximately 1 hour or until sweet potatoes are fork tender.  Let cool slightly and enjoy!
