So by now you have probably realized that although I love a nice complex meal, I’m a stickler for fast and easy recipes. This delicious dish is no exception and absolutely doesn’t disappoint either. The thing I love the most about quiche is how versatile it is. Literally you can let your mind go crazy with all the hearty ingredients you can add. This recipe is clearly vegetarian, however you can always add some meat to the mix to make it interesting (be sure to cook first though).
Ingredients:
8 eggs
1 cup Milk (I used skim, but if you want this extra rich go for Heavy Cream)
1 tsp Salt
1/2 tsp Pepper
1 1/2 cup shredded cheese
1 bunch of Spinach
1 Red Pepper Chopped
1 cup Mushrooms Chopped
1 ready use pie crust dough sheet
Directions:
Spray an 8 inch spring form pan with cooking spray and place the pie crust in the pan and form to the edges. Then begin layering the veggies within the pan. Next mix together the eggs, milk, salt, pepper and cheese and pour this over all the vegetables. Sprinkle a bit more cheese over the top and bake at 375 for 45-60 minutes.
Remove from the oven and let cool for 10 minutes before removing from the form and serving.
