{Quick Dinner} Garlic Shrimp and Artichoke Pasta

It’s dinner time! And tonight I just wasn’t in the mood to do anything all that lavish – and we were low on supplies in the kitchen. So what was the result? Garlic Shrimp and Artichoke Pasta – in less than 30 minutes!  Here’s the recipe – enjoy!

Ingredients:

4 oz. Spaghetti Pasta
1 tsp. Salt
1 tsp. Minced Garlic
1 pkg Peeled and Deveined Shrimp
1 tsp. Lemon Juice
1 6 oz. Jar of Artichoke Hearts
3 tbsp. Butter

Directions:

This is a one pot fun fest so enjoy the ease of clean up.  In a stock pot, cook pasta according to package instructions. Strain and set aside. In the emptied stock pot bring to medium heat and melt the butter. Once butter is melted add shrimp and artichoke hearts and cook until the shrimp turn a nice pink color. Add garlic, lemon juice, and pasta and continue cooking for a few more minutes to let the flavors soak in to your pasta.  Plate and Enjoy!
