Roasted Parmesan Asparagus

I’m always looking for quick and easy, yet yummy vegetable sides to accompany my meals. This dish has the added benefit of being a great option for a party hors d’oeuvre as well. Served hot or cold, it’s a versatile side dish that takes that wonderful asparagus flavor and elevates it with a simple seasoning of salt and better and a finish of grated parmesan cheese.

Roasted Parmesan Asparagus

Ingredients:

  • 1 pound of fresh asparagus spears
  • 2 tbsp of grated parmesan
  • salt and pepper to taste
  • olive oil

Directions:

Preheat the oven to 425 degrees Fahrenheit. Wash asparagus and cut off the bottom half inch of the stem. Spread out on a sheet pan and drizzle with olive oil and season with salt and pepper. Bake in the oven for about 10-12 minutes. Remove and sprinkle with grated parmesan. Serve hot as a side dish right away, or chill in the fridge and serve as an hors-d’oeuvre at a party.
