This cauliflower is a favorite in my house. Now if you have never had it roasted throw out all your notions of cauliflower. This is not the same mushy, bland vegetable or vehicle for cheese you are used to sitting in front of at your parents’ dinner table.

When roasted, cauliflower turns in to a nutty, delectable side. My husband did not even like cauliflower until I made it this way for him and now he actually requests that I make it.

I highly recommend you try this delish side dish.

Ingredients

Medium head of cauliflower
1 tbsp lemon juice
1-2 tbsp Garlic, minced
2 tbsp Olive Oil
Salt and pepper to taste
1/4 cup Grated Parmesan Cheese

Directions

Heat oven to 425 degrees. Chop cauliflower in to bite size pieces. Mix with lemon juice, garlic, olive oil, salt, and pepper. Spread evenly on cookie sheet and roast in center of oven for 20-25 minutes, stirring occasionally, until browned to preference. Remove from oven and stir in parmesan cheese.
