Roasted Peaches with Blue Cheese Crumble

This is a beautifully savory twist on a usual late summer dessert. It melds the sweetness of fresh peaches with the savory elements of a good blue cheese. We think you’ll love this fresh after dinner option.

Ingredients:

3 peaches diced (about 2 cups)
1/8 cup chopped walnuts
1/8 cup good blue cheese
1/8 cup dried cranberries
1/2 cup apple juice
3 tbsp sugar

Directions:

Preheat oven to 425 degrees F. Fill two ramekins with the diced peaches (or place in one dish and double recipe to serve up family style).  Mix together the apple juice and sugar and pour over the peaches dividing between the ramekins.  Sprinkle walnuts, dried cranberries and blue cheese over the top.

Bake for 25-35 minutes until the cheese is golden brown. Allow to cool about 10 minutes and devour!
