Rustic Potato Salad

Rustic Potato Salad

Ingredients:

2 lbs Baby Red Potatoes
2 cups Mayonnaise
1/2 cup Course Ground Mustard
2 tbsp Balsamic Vinegar
1 tsp Salt
1 tsp Pepper
1 cup Chopped Bacon
1/2 cup Chives or Scallions
1 cup Chopped Celery
1 8oz tub of Crumbled Blue Cheese
1 tbsn Parsley

Directions:

Clean potatoes, cube into approximate 1 inch cubes and place in a large pot.  Fill pot with water and add 1 teaspoon of salt to the water to flavor the potatoes.  Bring to a boil and cook until potatoes are soft (test with a fork).  Strain potatoes and let cool.

In a large bowl, combine mayonnaise, course ground mustard, balsamic vinegar, salt, pepper.  Mix thoroughly with a whisk.

Add all other ingredients and mix well. Let marinate overnight in the refrigerator and enjoy the next day.
