When summer is in full swing I’m always looking for quick and easy recipes that I can whip together without firing up the stove and adding more heat to an already hot apartment. This salad was literally a toss together from various ingredients I had in the fridge (I’m a fan of just grabbing whatever is on sale and using it creatively during the week).
So what’s in this summer salad? Strawberries, apples, walnuts, blue cheese, and a simple vinaigrette over mesclun greens. The recipe below is great for 2 people for a light dinner.
Ingredients:
1/4 cup sliced Strawberries
1 apple sliced
1/4 cup rough chopped walnuts
4 oz. Crumbled Blue Cheese
1/2 bag Mesclun Salad Greens
Vinaigrette:
2 tbsp Extra Virgin Olive Oil
2 tbsp Red Wine Vinegar
1/4 tsp Salt
1/4 tsp Pepper
Directions:
For the vinaigrette, whisk together olive oil, vinegar, salt and pepper in a small bowl and set aside. In a large bowl, combine all salad ingredients and drizzle with the vinaigrette. Toss together until the salad is properly dressed and serve.
Yup – that’s it. Doesn’t get any faster and easier than that does it.
