Super Easy Holiday Treat! Peppermint Almond Bark

Every year my mom and her friends get together over a weekend of baking and holiday goodie making in December. It’s an annual tradition that dates back as far as I can remember. Over the years, my mom has become a master of quick, easy and amazingly delicious holiday treats. For years these treats have satisfied sweet teeth in the lakes country of northern Minnesota and now that I’m out in New York, I’m anxiously attempting to bring some of these goodies and a few new twists to friends on the east coast.

In an effort for a quick and easy peppermint bark, I went back to the basics for utter simplicity. This recipe is so fool proof that you can’t help but whip it up on a regular basis around the holidays.  Here’s how to whip this together.

Ingredients:

1 cup Candy Cane crushed
1 pkg Dark Chocolate Chips
1 tsp Peppermint Extract

Directions:

Place chocolate chips into a microwave safe bowl and microwave at 30 second intervals, stirring well each time until chocolate is just melted and smooth, stir in peppermint extract until completely combined. Prep a baking sheet lined with wax or parchment paper.  Pour out melted chocolate and spread out to about 1/8 inch to 1/4 inch thick. Sprinkle crushed candy cane over the mixture and place in the refrigerator to set.  Once hardened, remove and break into 1-2 inch chunks.

That’s literally all there is too it!  Doesn’t get much easier than that.

Tip:  Feel free to use your favorite chocolate, dark, white, milk, whatever makes you squeal in chocolate joy. Another option is to swirl various different types of chocolate with a toothpick to get a swirled marble effect. You can also color your white chocolate with red or green to give a more festive flair.
