Sweet Potato Meatballs

Sweet Potato Meatballs

Meatballs are one of my go to meals as they are easy to throw together and generally a hit with the kids. They also freeze nicely and can be heated up in the microwave for a quick meal.

Ingredients:

1 lb Ground Turkey
1 Egg beaten
2 tbsp Old Fashioned Oatmeal
1/2 cup grated Sweet Potato
1/2 tbsp Cinnamon
1/4 tbsp Cloves

Directions:

Preheat the oven to 350 degrees and lightly spray a baking sheet with olive oil. Mix all the ingredients together and knead with your hands (my children love helping with this task). Roll into one inch balls, will yield about 24 meatballs. Bake for 15-20 minutes until lightly browned.
