Monster Cookies combine all our favorite little bits of childhood into one mound of chewy wonderment. Filled with chocolate chips, peanut butter, oats and multi-colored chocolate candies, this is a fun treat and a perfect pairing with a nice, cold glass of milk. I just can’t wait for these to come out of the oven!

Ingredients

1/2 cup Butter (room temperature)
1 1/4 cup Dark Brown Sugar
1 cup Granulated Sugar
3 Extra Large Eggs
1/2 tsp Vanilla Extract
1 12 oz Jar Chunky Peanut Butter
1/2 tsp Salt
2 teaspoons Baking Soda
4 1/2 cups Quick Oats
1/2 cup multi-colored chocolate candies
1/2 cup chocolate chips

Directions

Preheat oven to 350 degrees F.  In a mixer combine butter, sugars, vanilla, and eggs. Mix on medium-high for about 3-4 minutes then mix in the peanut butter. In a separate bowl mix together baking soda, salt and oatmeal. Reduce the mixer to low speed and slowly incorporate the oatmeal mixture followed by chocolate candies and chocolate chip. Mix until just combined.

Drop spoon fulls of dough (about 1.5 inch diameter) about 2 inches apart on a parchment-lined baking sheet.  Bake for 8-10 minutes and remove from oven. Watch your bake time on this recipe, taking them out when they are just done will result in a great cookie. Baking a few minutes too long will deflate the cookie. Allow to cool for about 5 minutes before transferring to a cooling rack to set completely.
